Ender Crop [Forge] Mod 1.16.5/1.12.2/1.11.2 adds to the game a new crop. It’s completely feasible for you to harvest it so as to collect ender pearls.

New features in the 1.16 version:
New Tilled End Stone textures to fit vanilla’s new Farmland textures
Proper seeds and crop tagging to create a stronger automation/tool interaction ability
The Crop:
The ender crop has 8 growth stages. When you harvest it at any stage, it will drop Ender Seeds. At Stage 8, it will grant you 1-2 Ender Pearls and occasionally an extra seed.
Growth:
On farmland:
Follows vanilla Minecraft growth rules but at 50% of the wheat rate.
Asks for light level <7 to grow (Redstone torch).
On tilled end stone:
Applies vanilla Minecraft growth rules at the same rate as wheat.
Needs any light level.
1 in 50 chance to spawn and endermite when harvesting (configurable)
The Seeds:
Ender seeds exist in dungeons and they are as rare as golden apples. (configurable)
You are able to craft them when you surround wheat seeds with 4 ender pearls.
Tilled End Stone (configurable):
To get tilled end stone, you should right-click regular end stone with a hoe. Enchant the hoe first with Unbreaking I or a hoe-like tool (AIOT, Kama, Scythe) with mining level 1 (Stone).
Furthermore, there is Waila/The One Probe integration.
